ZESPRI® GREEN AND GOLD KIWIFRUIT PAPAYA SALAD

INGREDIENTS:
1 lb long beans, , cut into 2 inch bias lengths
4 lb medium green papaya, peeled, seeded and grated
1/2 lb carrots, peeled and grated
1 lb ZESPRI® Gold Kiwifruit, peeled, halved and sliced thin
1/4 lb sweet 100 tomatoes, halved
1 cup roasted peanuts, chopped

Sauce Ingredients:
2 tbsp dried shrimp
4 each garlic cloves, minced
1 tbsp salt
4 tbsp dry roasted peanuts, chopped
2-4 each bird or serrano chilies, finely chopped
1/4 cup palm sugar or brown sugar
1/4 cup lime juice
1/4 cup Thai fish sauce


METHOD:

  1. Using a mortar and pestle; pound together shrimp, garlic, salt, chilies, 1/2 peanuts and sugar to a smooth paste. Add fish sauce, lime juice and 1/2 tomatoes. Lightly pound sauce mixture to combine. Set aside.
  2. Place beans in bowl and pour 1/2 of sauce over. Stir to combine. Mix in green papaya, kiwis and carrots. Toss in remaining tomatoes and peanuts. Taste and add remaining sauce as necessary. Garnish with fresh cilantro.
